Cookbook Recipes
Title: Zucchini Relish (canning)

Ingredients: 4 c coarsely ground Zucchini
4 c chopped Onions
3 c chopped Bell Peppers
4 1/2 c Sugar
2 1/2 c Vinegar
1 tsp Pepper
1 tsp Turmeric
1 tsp Nutmeg
Method: Sprinkle zucchini ans onions with 4 T salt and let stand overnight. Drain. Next day add peppers. Combine sugar, vinegar, pepper, nutmeg and turmeric. Bring to boil. Add vegetables and simmer 20 minutes. Pack in hot jars and seal.
Yield: 5 pints
