Cookbook Recipes
Title: Christmas Fruit Cookies
Author: Audrey Springer
Ingredients: 2-2 1/2 c Sifted Flour
1/2 tsp Baking Soda
1/2 tsp Salt
dash of Nutmeg
1 tsp Cinnamon
1 tsp Cloves
1 tsp Allspice
Method: Sift together and set aside.
Ingredients: 1/2 c Butter or Margarine
3 Egg Yolks
1 1/2 c firmly packed Brown Sugar
1 1/2 c Milk
2 tsp Vinegar
Method: Work with a spoon until soft butter. Gradually add brown sugar. Beat until light. Add yolks, well beaten. Beat until fluffy. Combine milk and vinegar. Set aside for 5 min. to sour. Gradually add to dough beating well after each addition.
Ingredients: 1 1/2 c seedless raisins
2 1/2 c mixed candied fruit
1 1/2 c chopped nuts
1 c currants
1 c candied cherry halves
3 Egg Whites
Method: Mix lightly. Add to batter. Mix well. Add dry ingredients gradually, beating well after each addition. Place egg whites in a bowl. Beat until stiff peaks form. Fold into cookie batter. Drop by spoonfuls on greased cookie sheet. Bake 350 for 12 min.
Comments: MY MILK DIDN'T SOUR THE FIRST TIME SO I'M GOING TO TRY BUTTERMILK IN THE AMOUNTS OF THE MILK AND VINEGAR. ALSO HAD TO BAKE LONGER THAN RECIPE CALLED FOR.
