Apple Cake |

Ingredients: |

3 c Flour
1 tsp Baking Soda
1 tsp Cinnamon |
Method: |

Sift together |
Ingredients: |

2 c Sugar
1 1/4 c Vegetable Oil
3 Eggs
1 tsp Vanilla
1/4 c Organge Juice |
Method: |

Beat with electric mixer until blended.
Stir in flour mixture. |
Ingredients: |

2 c grated un-pared Fresh Apples
1 c chopped Nuts
1 c flaked Coconut |
Method: |

Fold into batter. Spoon into a well-greased
and floured 10 x 4 angel tube pan. Bake in slow oven 1 1/2 hr. Cool in
pan on wire rack 15 min. Remove from pan to serving plate with a
raised edge. Puncture top of cake all over with a wooden pick. Spoon
hot buttermilk sauce (see below) over cake several times. |

BUTTERMILK SAUCE:
1 c Sugar
1/2 tsp Baking Soda
1 stick Butter
1/2 c Buttermilk |
Method: |

Cook, stirring constantly over medium heat
until mixture comes to boiling. |
