Cookbook Recipes
Title: Apple Salad
Author: Jan Sharpnack (Reatha's Daughter-in-law)
Ingredients: 1 large can Pineapple Tidbits
1 1/2 c red or green Grapes
Walnuts or Pecans to taste
4-5 red and green Apples, chopped with skin on
2 T Cornstarch
1/4 c Sugar
1/4 tsp Salt
1 Egg
Method: Drain juice from pineapple and add water to equal 1 1/2 c. Mix cornstarch, sugar and salt in saucepan. Slightly beat 1 egg then mix with pineapple juice. Slowly stir liquid into sugar mixture. Cook over medium heat until boiling, stirring constantly to avoid scorching. Remove from heat and cool to room temperature in bowl. Add fruits and nuts. Chill until ready to serve.
