Enchilada Casserole |

1 1/2 lb Ground Beef
1/2 c chopped Onion
1 can Refried Beans
1/2 tsp Salt
1/4 tsp Pepper
1 c Oil
12 Tortillas
2 Tomatoes, chopped
1/4 c Flour
1/2 tsp Salt
1/4 tsp paprika
2 c Milk
1 (10 oz) Echilada Sauce
1 1/2 c Cheddar Cheese
3/4 c sliced ripe Olives
Hot Sauce
4 T Butter |

Brown meat and onion. Stir in beans, salt
and pepper. Heat oil - warm tortillas. Place 1/3 c meat mixture on
each tortilla; roll and place seam side down in pan. Melt butter, stir
in flour, seasonings, milk, enchilada sauce. Boil 1 min. Add rest.
Pour over enchiladas. Bake at 350 for 30 min. |
