Cookbook Recipes
Title: Mabel's Sponge Cake
Author: Mildred Gates
Ingredients: 6 Large Eggs (separate)
1/2 c Sugar
3/4 tsp Cream of Tartar
Method: Beat white until foamy, then add cream of tartar. Beat until stiff, add sugar; beat like meringue. Set aside.

Beat egg yolks until lemon color. Add:

Ingredients: Juice of 1 Orange
1 c Sugar
1/2 tsp Salt
1 tsp vanilla
Method: Add in order, keep beating.

Fold together

Ingredients: 1 1/4 c Flour
1/4 tsp Baking Powder
grated rind of 1 Orange
Method: Fold batter into meringue. Bake 325 for 1 hour
Comment: I DO NOT ALWAYS USE THE ORANGE RIND.
