Cookbook Recipes
Title: Barbara Gates' Fruit Cake
Author: "Bud" Hobart Gates (Hobart Jr's Son)
Ingredients: 2 lb White Raisins (cut in half)
1 lb Coconut
.5 lb Black Walnuts
.5 lb English Walnuts
.5 lb Red Cherries
.5 lb Green Cherries
.5 lb Candied Pineapple (red & green)
1 lb Candied Mixed Fruit
Method: Sift 2 heaping cups of flour on fruit and mix well.
Ingredients: BATTER:
10 or 12 Eggs
1 lb Sugar
1 lb Butter
1 c Milk
2 c Flour (heaping)
1 T Vanilla
1 tsp Baking Powder
1 pinch Salt
grated rind of 2 Oranges
Method: Add batter to fruit and mix well!
Put into baking pans (bundt or loaf)
Bake 3 hours (1.5 hr at 250 degrees and 1.5 hr at 300 degress). Cake will get brown and firm.
Let cool and remove from pan.
Let stand 24 hours before cutting.
Cut in half and wrap with cheesecloth soaked in bourbon and rum.
Cover tightly with aluminum foil.
Comments: THIS IS AN UNUSUAL FRUIT CAKE DEVELOPED FROM MOM'S FAMILY. PEOPLE WHO NORMALLY DON'T EAT FRUITCAKE WILL EAT THIS ONE. EVEN PEOPLE WHO DO NOT LIKE LIQUOR WILL ENJOY THIS CAKE'S TASTE. THIS CAKE IS MADE EVERY THANKSGIVING HOLIDAY AS TO BE READY FOR CHRISTMAS HOLIDAY. MOM AND DAD MADE THIS EVERY YEAR. WHEN MOM PASSED AWAY, DAD MADE SURE THAT WE LEARNED THE RECIPE AND WE HAVE CONTINUED EVER SINCE. OUR IN-LAWS AND FRIENDS EXPECT A PORTION OF CAKE EVERY HOLIDAY.
