Cookbook Recipes
Title: Seafoam Icing
Author: Ethel Gates
Ingredients: 1 c Sugar
1/4 c Water
2 Egg Whites
pinch Cream of Tartar
Method: Place sugar and water in saucepan and boil until forms a "tread" when dripped off side of spoon. Slowly pour into stiff egg whites in bowl of mixer.
Comments: CAN USE EITHER BROWN OR WHITE SUGAR. BROWN SUGAR KEEPS A LITTLE BETTER BUT HAS A BEIGE TINT TO IT.
IF YOU NEED IT REALLY WHITE, USE WHITE SUGAR.
