Cookbook Recipes
Title: Caramels
Author: Ethel Gates
Ingredients: 1 c Dark KARO Syrup
1 c Butter
1 c Chopped Nuts
2 c Sugar
1 can (13 oz) Evaporated Milk
Method: Bring syrup, butter and sugar to a boil. Slowly add evaporated milk. Boil until it forms a firm ball in cold water. Stir often to prevent sticking. Add nuts. Pour into buttered square pan. Cut in squares next day and wrap each piece in waxed paper.
Comments: UNLESS YOU'RE GOOD AT THE "COLD WATER METHOD", RELY ON CANDY THERMOMETER. SOME LIKE THESE SOFT BUT THEY'RE EASIER TO HANDLE IF FAIRLY FIRM.
