Cookbook Recipes
Title: Ziti Calabrase
Author: Paul Brennsteiner (Edith Gale's Son)
Ingredients: 2 (27 oz) cans plum tomatoes
5 Banana Peppers or Cubanellas (which are not hot)
olive oil
2-3 fresh cloves garlic
2 or 3 chicken breasts, cut into strips
small bag fresh spinach
ziti or penne pasta, cooked
Method: SAUCE:
In a saucepan, simmer peppers in olive oil until they start to blister. Add fresh chopped garlic to taste. Let simmer until garlic starts to brown, add plum tomatoes, breaking up as you add them. Let simmer about a half hour.

Saute lightly floured chicken strips in olive oil till just done, add spinach. Saute and add sauce. Toss with ziti or penne.

To Serve: Serve with fresh basil and Romano Cheese.
